Congrats to John and Sharon
This is a little late but wanted to say Congrats to Brian's brother and our future sister in law Sharon! They are getting married in the fall and we are super excited to welcome Sharon into the Laffin family! Cute pic from our LA trip last year

Raising Awareness
Saturday Brian and I were privileged to get to watch our friends' documentary "The New Sudan" at a local theater. Check out Nadus Films by clicking on the link above or to the right. I have put off blogging about it because it was so amazing I couldn't think of the words to write. It is about the long civil war between the Northern Sudanese Muslims and the Southern Sudanese Christians and now the aftermath in Southern Sudan. I sat there watching this film being moved and all the while thinking "I am so proud to know these men who used their talents that God gifted them with to show people what is really going on in Southern Sudan."
You should check out their website which is here and watch the trailer. If you live in Louisville you can see it again at Baxter Avenue Theater this Wednesday. GO SEE IT! William Mapother (all you LOST fans out there) is the narrator too. You can also give to Nadus which would help build schools, hospitals and churches as well as making sure the people have clean water. Another way to get involved is to host a screening of "The New Sudan" at your church, school, local theater etc.

Meal Plan Monday
Monday- Pizza
Tuesday- Caesar Pockets with fresh veggies (carrots, cuc's, and peppers) with pretzels
Wednesday- Chicken sandwiches and salad
Thursday- Slow Cooker Carnitas with refried beans and Spanish rice (i'll probably add some sort of veggies to the rice)
Friday- leftovers
Saturday- Black Eyed Pea Soup in the crockpot with french bread
Sunday- Zero point soup and grilled cheese

Meal Plan Shhmeal Plan...How about some favorites
It ain't happening this week people! We are down to very little and I don't know when I will be going to the grocery store.
I did make these Gluten Free Muffins with Berries and Bananas yesterday.
I didn't have maple syrup, cardamom, or cinnamon and I added rhubarb and blackberries (from my mother in laws garden). Lesson learned. I really needed some of that stuff to make it taste better. I will attempt these again and leave out the rhubarb...better to save that for pie.
I figured it was time to share some of our favorites right now

1. LOST has been amazing this season!
2. We have been listening to a lot of sermons from Mars Hill Church in Seattle.
3. Lose It! This is an application on our itouches that helps us count our calories. Brian used it while I was pregnant to lose a lot of weight and now we are both doing it together. It is a great app.

4. Coupons. nuff said
5. La Rosita in New Albany is the best Mexican restaurant we have ever been to. Don't even think you have one that compares because we will fight you over it.

Got the picture here which is also a great review on the restaurant. We have taken several friends and family to La Rositas and they all love it (except my parents but I think they must have messed up taste buds).

Meal Plan Monday
Thanks to a little nudge from my friend Beth ;), here is my menu plan for the week:
Monday- Dinner with our community group...we made Spanish rice...the rice a roni kind. fancy I know.
Tuesday- Salmon Patties, Sweet Potatoes and Apples
Wednesday- Shrimp Gumbo with Cornbread (my parents got me a gumbo mix from Savannah)
Thursday- My friend Leslie gave me this recipe in one of those recipe exchange forwards over email:
Black Beans and Rice
2 cans black beans (rinsed and drained)
1 cup salsa
1 can diced tomatoes
You can add chicken or ground beef if desired. (at this point in the week we are pretty much out of meat so won't be using any)
garlic (1 tablespoon diced)
lemon juice (1-2 tablespoons)
lime juice(1-2 tablespoons)
add water if too thick for your taste (about 1/2 to 1 cup)
Put all the ingredients in the crock pot and cook on high for 4-5 hours or low 8 hours so flavors meld. Serve over white or brown rice with cheese, sour cream, and cilantro with tortilla chips.
Friday- We are headed to visit Brian's parents in Bowling Green
Recipe Reviews:
All the recipes that I listed on my last meal plan a few weeks ago were great. I would make any of them again.
Last week I made this great recipe that my friend Beth sent me called Falafel with Avocado Spread and it was yummy. Met the approval of my husband as well.
We also attempted these Stuffed Cabbage Rolls last week. They were tasty but after my umpteenth attempt at stuffing cabbage leaves I have decided that it is not for me. Too much work and my leaves usually fall apart.
Here is another one we tried, Scalloped Potatoes and Hamburger. I can't say that I am very proud of this recipe...it pretty much broke my rule of always having something green at the table. I was trying to use what we had and this recipe fit the bill. It was really good and Brian loved it but like I said...not real good for ya.
