Summer Time CSA
We started getting our vegetables and fruits from the farmer whom we are in a CSA (community supported agriculture) with about 3 weeks ago. We are splitting a 1/2 bushel (each week) with our friends The Wallaces. The picture below is from a few weeks ago...right now lots of greens, root veggies, and strawberries are in season. It has been a challenge to figure out how to cook some of these foods but it has also been fun. I have actually been cooking a lot more now that I am feeling better. I did find a pretty good recipe for kale that I used a couple of weeks ago. Picture below. I didn't use garlic but instead used this garlic like stuff that we got from the farmer. We can never remember what it is called...after googling...garlic scapes. We used those instead of garlic and it came out pretty good. We have also been LOVING all the strawberries. This morning Ruby and I enjoyed strawberry pancakes! Yum! We are loving eating so healthy and we love that our friends Luke and Katherine work at the farm. They tell us all about the foods they give us each week.

Updates
You may have noticed that I have been slacking on this blog. My pictures are few and far between and I have completely given up on the meal planning. I do have a good excuse...we are expecting baby #2 in November! We are very excited but I have been feeling pretty rough. The last couple of weeks have been a little better and I am hoping for more good days since I am now in my 2nd trimester. Some of you may remember that I had some complications when I was pregnant with Ruby. The doctor has told me that I may have a healthy pregnancy this time but just in case they are watching me closely.
Ruby is doing well. She is growing like a weed and talking up a storm. She likes to sing songs and dance with her little friend Nora. She LOVES the park and going to play with the kids at church. We have been trying to teach her to pray and so far she really likes saying "Amen." She is a little obsessed with Sesame Street but that is okay with me since I also enjoy it.
Brian found out about a month ago that his company is closing. His last day at his job is the end of September. It is a scary time for us but we are trusting in God's provision for our family. We have been reading through the Old Testament with our church this year and it has been a great encouragement. We see how God always provided for the Israelites and we trust that He will provide for us. God says the following to Joshua after Moses died (Joshua 1:9):
"Have I not commanded you? Be strong and courageous. Do not be frightened, and do not be dismayed, for the Lord your God is with you wherever you go.”

Pegasus Parade
The month of April is full of fun activities in Louisville. Everyone is celebrating and anticipating the Kentucky Derby. Below are a few pic's from the Pegasus Parade. It is great because tons and tons of horses line up on our street in preparation for the parade. We are so close to downtown that we are able to walk down there. Ruby had an absolute blast and we met up with some friends to enjoy the parade with.
