Kentucky Summer

Summertime is upon us in Kentucky.  It has been stinkin hot lately but we got a break today with some cooler weather.  We have been outside a lot more and the girls are loving it.

Monday Meal Plan

I had to go back to some of my archives this week for inspiration.  Here is what we are looking at this week:


Tuesday- Asparagus and Mushroom Frittata
Wednesday- Spinach Salad with Salmon
Thursday-   Feta Cheese Turkey Burgers with Quinoa Salad and Zucchini
Friday- Cucumber, Tomato and Hummus Sandwich with Salad and Crusty Bread
Saturday-   Sauteed Cabbage and Sausage

Monday Meal Plan

Monday- Dinner with our community group (I'm taking strawberries and whipped cream and raw carrots and cucumbers)
Tuesday- hobo packs (Turkey Burgers and Veggies (potato's, carrots and maybe asparagus) in foil with butter in the oven)  EDIT:  I am going to use apple flavored chicken sausages instead
Wednesday- Grands Biscuits with cheese sandwich (thanks to my friend Gretchen)  with baked sweet potato and salad
Thursday-  spaghetti with goat cheese and asparagus (recipe from my Real Simple App on my phone)
Friday- Cuban beans and rice with salad
Saturday-   Stuffed Mushrooms with turkey sausage and veggies
Sunday- Baked Spaghetti

Tiny Dancer

Last week Ruby had her very first dance recital. She did a wonderful job up on the stage. It was amazing to see how far she has come...when she started dance in January she would not even dance for several weeks during practice because she was so shy. Last week at the recital she had no problems getting up on stage and did a great job with the dancing!

Meal Plan

Monday- Dinner with our Community Group
Tuesday- Salmon Burgers with Chimichuri sauce with cole slaw(shredded cabbage with lemon juice, olive oil, salt and pepper) and corn on the cob
Wednesday- Baked (or maybe in the crock pot) chicken with a salad of Goat Cheese and Arugula over Pasta
Thursday-  Breakfast for dinner (seriously, I really want to make this but it just hasn't happened for the past couple of weeks)...hash browns, turkey bacon, toast, and quiche (with whatever veggies I find at the farmers market this week)
Friday- Cheesy Zucchini Enchiladas with fat free re fried beans (I had these on my meal plan a while back but never got to them)
Saturday- Out for Brian's Birthday!
Sunday- Leftovers or some sort of pasta (i have a bunch of pasta right now)

Back to the Books

I finally got around to taking some of the pictures off of my phone. A few weeks ago we read the book "Bedtime for Frances" written by Russel Hoban and Illustrated by Garth Williams.


We have a few different Frances books and Ruby has always really liked them. After reading this cute (and all too familiar) story about Frances not wanting to go to bed we did some talking about Ruby's bedtime. She talked about all the things she does before she goes to bed. She did a great job walking through every detail (we have essentially done the same things since she was about 3 months old).  

Ruby decided that her favorite thing to sleep with was her pink princess bear.  I "drew" a picture of the bear for her to color and she was super excited and focused.  She spent a lot of time coloring her picture and wanted to do several more.  She tried cutting the bears out but needed some help from Mama.  She played with those bears for several days after we read the story.

Ruby went to her friends birthday/tea party today and got to make her own hat.  She is ready for the next Derby!
